Gouda & Mushroom Stuffed Chicken: A Cozy Comfort for Any Occasion. A delicious and comforting dish featuring savory mushrooms, melted Gouda cheese, and tender chicken breasts. Perfect for a cozy evening or a special occasion!

Ingredients

Scale
  • 5 Tbsp. olive oil, divided
  • 14 oz. baby bella mushrooms, divided
  • 1/2 cup white onion, diced
  • 1 Tbsp. dried parsley
  • 2 cloves garlic, minced
  • 3/4 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 cups Gouda cheese, shredded, divided
  • 4 boneless, skinless chicken breasts

Instructions

  1. Step 1: Prep the Ingredients. Preheat the oven to 400°F (200°C). Chop 10 oz. of mushrooms and set aside. Slice the remaining 4 oz. of mushrooms for later use.
  2. Step 2: Prepare the Chicken. Slice pockets into the chicken breasts without cutting all the way through. Pound them lightly for even thickness.
  3. Step 3: Cook the Mushroom Filling. Sauté chopped mushrooms in olive oil, then add onion, parsley, garlic, thyme, salt, and pepper. Combine with 1 cup of Gouda cheese.
  4. Step 4: Stuff and Sear the Chicken. Brown the chicken breasts in a skillet.
  5. Step 5: Assemble and Bake. Stuff each chicken breast with the mushroom and cheese mixture, then bake for 50 minutes.
  6. Step 6: Finish with Toppings. Sauté sliced mushrooms, top the chicken with remaining Gouda cheese and sautéed mushrooms, then bake for an additional 7-10 minutes.
